Yes, I am crazy and would love to take my grey interior and put a bunch of black leather accents in where the plastic pieces are.
How does the two pieces forward of the dash come out? Do you have to remove the dash first or can they be popped out after removing the HVAC vents? I ordered a workshop manual off ebay, hopefully it will be the Porsche one with all of these details.

As I recall from watching some assembly videos, the dash is installed in a single unit, so I'm not sure you'll be able to extract that particular piece in situ.
The defroster trim comes off after you remove the lining on the A-pillar. Once removed the defroster trim can be popped up. Careful because the leather can get scratched very easily.
