Explicit resolution reports before identified causes, performed actions and suggestions. Within each level, matching component labels precede direct query mentions and inherited thread context; successful versus unsuccessful discussion counts, owner confirmations and independent discussion support determine order. This is not a probability of success.

Reported cause
The issue is the diluted coolant both has less anti-corrosive inhibitors, but more important as we head in to winter, anti-freeze.

Suggestion
As you will have guessed the flashing light was due to low coolant levels and unsurprisingly when it does flash (with normal temp reading) it should be filled with the correct coolant and checked ASAP.
Leading evidence: 'diluted coolant both has less anti-corrosive inhibitors' (1 discussions report identifying this cause; no attributable repair resolution). Across 1 matching discussions, the most frequently mentioned possible cause is 'diluted coolant both has less anti-corrosive inhibitors' (1 discussions; 1 report identifying it and 0 suggest it). The most frequently discussed action is 'Check asap' (1 discussions). For that action, 0 discussions report a resolution and 0 report an unsuccessful attempt. No action has an explicit, attributable resolution report under the current rules. These are forum reports and suggestions, not a confirmed diagnosis.

Erm, I would get some coolant in there ASAP and check for system continuity (you are correct in that the system could have settled/air bubbles flushed since refit, but that would normally be less than 2-300ml of volume)

i know that this will need to be filled so I will do this tomorrow but is it at all possible that I have NO coolant at all or would it have travelled around the system and just left the plastic tank empty.
These are separate views of the same evidence. Frequency alone does not establish a fix, and these counts must not be added together.

Counts describe captured discussions, not unique people or a diagnosis. Author identities are not reliably stored. Exact duplicate evidence is counted once across matching discussions; one discussion counts at most once per action/state. Multiple repairs reported together remain a combination. Suggestions and failed attempts do not establish a fix. Matches cover whole discussions and can include related faults, model variants and incomplete threads.

the red light on the temp gauge started flashing today whilst i sat in traffic.
the needle is right in the middle i.e. not showing that the engine is too hot.
when i switch off and let it cool the ligt only flashes when its at working temperature.
i looked in the coolant tank and its empty! i know that this will need to be filled so I will do this tomorrow but is it at all possible that I have NO coolant at all or would it have travelled around the system and just left the plastic tank empty.
I have had a new rad about 2k miles ago following a prang so could it be that it has settled since the initial fill up?
Final question, do I get any coolant or does it need to be uber expensive stuff from a special shop?
Final Final question, can it be topped up with distilled water?
Thanks in advance

It is quite possible you have a leak and hence no coolant (or just enough to cover the sensor).
It is also possible the coolant tank is cracked (a common occurrence).

You can top up will distilled up to about 1L in total. (ie over and above correct ratio)

The correct coolant depends on what is currently in there (mixing can cause a chemical reaction to drop precipitates into the system and mess up your pump or simply form a blocking gel).

Personally I wouldn't chance bursting your coolant system for the sake of a few litres of coolant top up.
Total system volume is 22L.
I wouldnt drive it until you have filled it up! I would think it unlikely that the tank would be empty just from air bubbles/air lock clearing. Almost certainly some leak in the system as GT4 says.
