The other day, I stalled my car ('99 996 C2). I had pulled over the side of the street to check on something and got distracted. I forgot the car was in first gear and popped the clutch. So of course the car lurched forward a bit and stalled. It took forever to get the car to start again. The engine would actually start but immediately cut out again about a second after the key was released. If I tried to start it up again immediately after that, the engine just would not catch at all. After waiting about 5 minutes the cycle would repeat. Now, I had assumed I had flooded the engine so I was not applying any throttle during the start proceedure. But after sitting in the dark for about 30min and failing to get the car going again I gave it a try. After waiting about 5 minutes I turned the key, the engine started, and before it cut out I gave it some throttle. The engine sputtered a bit but finally kept going much to my relief. I've never had that much trouble before (with this or any other car). My question is why did this happen? What is the 'correct' proceedure to do should I get into this situation again?

You didn't say how long the engine had been running before the stall. The engine may have been running rich. It is common for a warmed engine to have difficulty starting warm when it is shut off rich. Probably a one time event. No worries unless it happens again. If you havent cleaned the throttle body in the last year, you may want to do so, Also run a few tankfuls of gas with an injector cleaner added.

Thanks for the reply. In fact, the car had just been started (a couple of minutes maybe). I was driving through residential streets so never exceed 35mph or 4000rpm.

If the plugs are old, I'd change them also.
