Read evidence and context
Explicit resolution reports before identified causes, performed actions and suggestions. Within each level, matching component labels precede direct query mentions and inherited thread context; successful versus unsuccessful discussion counts, owner confirmations and independent discussion support determine order. This is not a probability of success.

My second oil change looked like that after I had used the Driven break in oil.
Leading evidence: 'Use driven break in oil' (no explicit attributable resolution; this is a reported action or suggestion). Across 1 matching discussions, the most frequently mentioned possible cause is 'zinc or some other additive' (1 discussions; 0 report identifying it and 1 suggest it). The most frequently discussed action is 'Replace looked like' (1 discussions). For that action, 0 discussions report a resolution and 0 report an unsuccessful attempt. No action has an explicit, attributable resolution report under the current rules. These are forum reports and suggestions, not a confirmed diagnosis.

Suspected cause
I figured it was the zinc or some other additive from the break in oil.

Replace with good synthetic and you should be good

I had to reseal the oil pan on an Audi once and was surprised to see that deposits had come out of the cheap non-synthetic oil that I had put in there just a thousand miles prior so as to flush the engine out after opening it up and doing the heads.

Counts describe captured discussions, not unique people or a diagnosis. Author identities are not reliably stored. Exact duplicate evidence is counted once across matching discussions; one discussion counts at most once per action/state. Multiple repairs reported together remain a combination. Suggestions and failed attempts do not establish a fix. Matches cover whole discussions and can include related faults, model variants and incomplete threads.

I had a small oil leak coming from the oil plate seal. Pulled it off to clean up and reseal. I'm about 3500-4000 mi out of a re-re-rebuild, everything seems to be going well but curious if anyone knows what the grey would be in this video.
I can only assume this was from the break-in process, there is nothing else alarming. No significant amounts of metal in the oil filter, etc. Just curious more than anything.
LN Cylinders, JE Pistons, 3.6 -> 4.0, cams, etc.

Lmk what you think
Way too much sealant. I am also having a hard time seeing what you describe as "gray matter" other than perhaps a bit of darkness in some of the oil. Hopefully you are doing an oil analysis? That might answer the question for you.
Thats weird that the oil isn't uniformed across the whole bottom part of the pan itself. Seems like spots are not allowing the oil to sit and almost pushes it way from those areas? Interesting.
Maybe I'm not seeing this pic correctly, with my old eyes. But that color oil looks like a milkshake of coolant and oil mix. Hopefully those globs aren't coolant oil globs. Maybe globs of assembly grease..? I can't tell. Maybe it is sealant idk...
The size/amount of the white globs would have to be a massive amount (1/4 tube extra ?) of sealant if thats what they actually are. And even with gallons of sealant the sump plate was still leaking...?

Is this your second oil change? Did you use a break in oil for the first few miles? My second oil change looked like that after I had used the Driven break in oil. I figured it was the zinc or some other additive from the break in oil. Third oil change was fine
Cheap non-synthetic oil, probably put in there as an initial break-in oil.
