On occasion, I'll use the suction cup on the passenger window. It gives a great view of the driver, forward view, side view, and passenger side mirror (if adjusted correctly). Otherwise, it's on the roll bar.

There are rear-view mirror brackets made to hold radar detectors. One of these could probably be modified to hold a camera. Check the radar detector sites like escort and valentine.
