Explicit resolution reports before identified causes, performed actions and suggestions. Within each level, matching component labels precede direct query mentions and inherited thread context; successful versus unsuccessful discussion counts, owner confirmations and independent discussion support determine order. This is not a probability of success.

(As an aside I have been in 116F temps with my Boxster (and 118F in my Turbo) and with Mobil 1 0w-40 oil and the engine suffered not one iota, but the oil was fresh, in the case of the Boxster with no more than 1000 miles on the oil and these miles were all highway miles from Sacramento CA where I had the oil changed to southern AZ where I ran into up to 116F ambient temps and the coolant temp stayed at 226F for hours at a time as I made my way out of that hellish high heat.)
Leading evidence: 'Run into up' (no explicit attributable resolution; this is a reported action or suggestion). Across 1 matching discussions, The most frequently discussed action is 'Replace oil' (1 discussions). For that action, 0 discussions report a resolution and 0 report an unsuccessful attempt. No action has an explicit, attributable resolution report under the current rules. These are forum reports and suggestions, not a confirmed diagnosis.

I will be changing the oil before my next trackday to 5w-50 to see if that will remedy my issue.

Suggestion
A lot of people dont realize they should run an oil that is specific for track conditions.

Counts describe captured discussions, not unique people or a diagnosis. Author identities are not reliably stored. Exact duplicate evidence is counted once across matching discussions; one discussion counts at most once per action/state. Multiple repairs reported together remain a combination. Suggestions and failed attempts do not establish a fix. Matches cover whole discussions and can include related faults, model variants and incomplete threads.

After a cool down the pressures were back to normal.
I have a 99 C2 with PSS9s and sumitomos (225-285-18). I was running a lead follow with my student so i wasn't pushing really hard. I noticed about half way thru the session that my oil pressure was topping at just a little over 3 bar even when the rpms were over 6k. My water temp was just about to the bar past 180 but nothing to worry about. When I came off track and idled in my pit the pressure was just below 1 bar. After a cool down the pressures were back to normal. The trackway was Laguna Seca and the weather was in the low 70s to upper 60s. My current oil is Mobil one 0w-40. I did notice I was a little low on oil when I checked after the cool down, may be a 1/8 of a quart.
Do I need to change to a different weight oil? Should I be worried?
I have the 1999 shop manuals, not here. These are the oil viscosities that are recommended. This is from the Bentley 996 manual. The shop manual has a very similar chart. YMMV
I understand the oil pressure sender unit is not very reliable, I also had a similar experience with my 01 996 oil pressure dropping in long sweeping corners..
I solved the problem with buying a gt3
Yeh a GT3 would cure it.
A lot of people dont realize they should run an oil that is specific for track conditions. Maybe even consider the oil starvation prevention upgrades if your going to keep tracking it.
The coolant temp gage is woefully worthless for monitoring coolant temperature. The gage is heavily dampened. An OBD2 data logger connected to the OBD2 port can record among other things coolant temp and the actual temp can be a well, let's just say an eye opener.
Almost certainly the coolant temp was quite a bit higher and oil temperature higher yet. Oil comes in contact with the hotter parts of the engine than does coolant so oil temp will be hotter in these situations than the coolant.
Was the oil fresh? Old oil is contaminated oil and this can result in oil that loses some viscosity and oil pressure suffers.
I would think given the type of usage you give your car your car's engine would be a good candidate for Mobil 1 5w-50 (not a typo for 15w-50!).
Obviously this oil has a higher viscosity rating at high temperature and it is still a Porsche approved oil.
My local Mobil oil distributor sells this oil by the case (6 quarts/case) for sometimes less than 6 quarts of Mobil 1 0w-40 costs.
I run this 5w-50 oil during the summer months here where I live because ambient temps can climb to over 100F and even though I do not track my cars coolant temp can climb to 226F and stay there for extended periods of time.
