That thermo has been changed before and I suspect, so too has the water pump.

I changed mine and the water pump only last year and mine was the higher temp one which I changed into the lower temp as I changed the water pump.

Replaced the water pump, thermostat, all pulleys and few coolant hoses.
Counts describe captured discussions, not unique people or a diagnosis. Author identities are not reliably stored. Exact duplicate evidence is counted once across matching discussions; one discussion counts at most once per action/state. Multiple repairs reported together remain a combination. Suggestions and failed attempts do not establish a fix. Matches cover whole discussions and can include related faults, model variants and incomplete threads.

Hello gents
So I got to spend my lovely afternoon today getting down and dirty with my her- I got to spend a lil one-on-one time with her, getting messy with my hands all under her.- yup; time for some preventative maintenece. Replaced the water pump, thermostat, all pulleys and few coolant hoses.
When I got to the thermostat I noticed the original thermostat is stamped with 71* , while the new OEM Porsche thermostat has 83* on the top. So Is that the temp stamped on top? Could this pose a problem letting the car get too hot before opening up? It's my DD so I just slapped it on as the thermostat was still original from when new.
Happy to see the water pump still had all its fins. It was original with 122xxx miles. No leaks, no noisy or wobbly bearing. But it was time and I replaced with another OEM pump.
It sure looks like a degree mark on both old and new thermostats to my eyes, but I don't have the answer for you. Nice to know all of the fins are intact especially after 122k. Nice job!
Those are indeed temperature markings for when the thermostat is full open. 83 degrees Celsius is 181.4 degrees F...about the original normal operating temperature. The 71 degree Celsius thermostat is 159.8 degrees F..or a low temperature thermostat. Somebody at one point in time installed a low temperature thermostat. Depending on your location, you probably will see a rise in your observed operating temperature with the 83 degree thermostat compared to the 71 degree thermostat. However, 83 is OE.
What DB Joe is trying to say is that the thermos actually let water passed them when the temperature of the water reaches the stated degree on the Cap. From then on the water travels via the radiators and condensers to be cooled. The water then goes on to reach working temperature of approx 180. It doesn't matter which thermos is used. It does not alter the final temps of the cooling system. No matter what your records are saying or not saying. That thermo has been changed before and I suspect, so too has the water pump. The engine leaves the factory with thermo in the 80s. Someone changed it to the lower temp one. I changed mine and the water pump only last year and mine was the higher temp one which I changed into the lower temp as I changed the water pump.
Thanks guys.
I did wonder if the previous owner had installed a lower temp thermostat- but disregarded it as the water pump and hoses were still all original (I had to cut the gasket for the WP where it goes into the cooling manifold.) I didnt think to convert the Celsius to F* to see if it would be the correct operating temp.
