This removes any moisture (and could remove some oil) and allows the tech to check for any leaks in the system.
Leading evidence: 'Check any leaks in the system' (no explicit attributable resolution; this is a reported action or suggestion). Across 1 matching discussions, The most frequently discussed action is 'Check any leaks in the system' (1 discussions). For that action, 0 discussions report a resolution and 0 report an unsuccessful attempt. No action has an explicit, attributable resolution report under the current rules. These are forum reports and suggestions, not a confirmed diagnosis.

contain oil- is there enough oil in these cans to lubricate the A/C or do I somehow have to inject some extra in?

I have the parts on order, I have no issue taking off the bumper, replacing the condensers, drier etc.

There is an A/C test procedure in the factory manual that details the steps to test the A/C system and which gives a graph that given the ambient temperature what the A/C vent air temperature should be from IIRC the center dash vents.

Counts describe captured discussions, not unique people or a diagnosis. Author identities are not reliably stored. Exact duplicate evidence is counted once across matching discussions; one discussion counts at most once per action/state. Multiple repairs reported together remain a combination. Suggestions and failed attempts do not establish a fix. Matches cover whole discussions and can include related faults, model variants and incomplete threads.

My A/C condenser needs replacing. It's rotten,
so consequently also the whole system is totally devoid of Gas!
I have the parts on order, I have no issue taking off the bumper, replacing the condensers, drier etc.
My question is on the refill:
Once all reassembled the whole plumbing will be full of air! so what happens to that air when I refill? Is there a bleed valve somewhere?
Also the system needs oil. kits such as this (recommended by Peilican)

contain oil- is there enough oil in these cans to lubricate the A/C or do I somehow have to inject some extra in?
thanks!
If there's no gas and little oil left, there's no vacuum so thers's air in the system. Atmospheric air has moisture, which will make your AC inefficient. You want to vacuum the system before recharging it with refrigerant.
Bring it to a professional, they will evacuate the system with a vacuum pump, then charge it with the correct weight of refrigerant and it might need some oil also. In the US, it's about $150 labor for this. Necessary step and you don't have the tools or knowledge.
Good luck!
Don't even bother fooling with it if you aren't going to pull a vacuum on it. I would recommend you get it all assembled and have a professional pull a vacuum and recharge it.
As others have suggested you are better off taking the car to a shop equipped to properly evacuate the A/C using a vacuum machine.
This removes any moisture (and could remove some oil) and allows the tech to check for any leaks in the system.
After 30 minutes to 1 hour at vacuum (different car models have different call outs) the tech will then recharge the system with the proper amount of refrigerant and return any oil to the system plus some to make up for the oil that was lost with the replacement of the condenser. In its factory reference manuals Porsche publishes a chart of how much oil is "lost" when replacing an A/C system component and this amount of oil must be added to the system.
After the above then the system should be tested to ensure it performs up to spec. There is an A/C test procedure in the factory manual that details the steps to test the A/C system and which gives a graph that given the ambient temperature what the A/C vent air temperature should be from IIRC the center dash vents.
