I would like to change the door panels to full leather.

Best bet is a local leather specialist, who usually will carry leather and vinyl. Some can repair anything too, but if you need material, they can usually find it for you.
What parts of the interior are you trying to repair? I've just gutted a Savannah Beige interior while in the process of building a track car, and might have some things that could help you.
My car (MY 2000) was full leather. I've got a center console, door panels, speakers and grills, front and rear seats, carpet, steering wheel, full set of airbags,... Condition of the stuff is variable, ranging from very good to fair. Some of the stuff is at my house, some I'll be picking up at my cage builder's shop tomorrow.
