I would check the brake fluid to see if it has absorbed any moisture, and if so I would replace it too.

I bought a 1999 Porsche 911 about 2.5 years ago with under 14K miles. At the time everything was completely serviced and since then have kept the car in the garage. Probably put about 100 miles on the car. I am reading so many articles and plan to drive the car more now, but wanted to see if the oil and brake fluid really need to be changed. It has been a garage queen with original tires. Kind of cool being the first water cooled Porsche. The oil is crystal clear and not sure how much synthetic breaks down if any over time. Regarding the brake fluid, I know the Porsche manuals say 2 years. Also, I am bringing the car in though to get new Michelin PS2 tires. Think it is worth it to keep the originals? Thanks!

Yes, you should change both of those fluids. Total investment of less than $100. Worth it IMO for peace of mind to know you aren't exposing all the expensive bits of your brake system to corrosion, or risking accelerated engine wear from sub-par oil.

Definitely change the oil. It isn't "oil breakdown" that necessitates an oil change. I would check the brake fluid to see if it has absorbed any moisture, and if so I would replace it too. A car setting is not a good thing. Cars need to be driven regularly, and long enough to get them up to temperature, in order to be properly maintained.

Yes, change those fluids. You might even want to do a coolant flush and diff/trans fluid change as well, assuming those fluids are probably original. There�s a reason why fluid changes are not just mileage, but also time based.
